Easy One-Pot Recipes for Winter-Time Chaos

With winter in full swing, you probably have enough on your plate. From hitting the slopes to wrangling extracurricular activities, it’s a busy time of year and cooking just adds to the chaos. But making dinner doesn’t need to involve making a mess (or DoorDashing through the snow). There are tons of one-pot recipes that are easy and delicious. Consider one of the following:

American Goulash

This American goulash recipe is made with a ton of ingredients, including ground beef, red wine, diced tomatoes, tomato sauce, soy sauce, crushed red pepper, and elbow macaroni. It’ll need to simmer for about an hour before it’s ready to serve. If you don’t finish the entire pot, don’t worry; it freezes well for up to three months. 

Sriracha Chicken

If you’re over nuggets and roasted chicken from the local deli, give this sriracha chicken recipe a try. Made with chicken, red potatoes, pepper, garlic, sriracha sauce, and brown sugar, you can throw this meal together in just over an hour. You can also add whatever vegetables you want, giving you a prime chance to sneak some carrots, zucchini, squash, or broccoli into your food pyramid. 

Macaroni and Cheese

This macaroni and cheese recipe is perfect for those times when Kraft just doesn’t seem crafty enough. Whether you have a house full of kiddos or just really like cheese (you’re only human, after all) you can pull this meal together in about an hour. Made with ingredients that include garlic, thyme, mustard, and clove, it has a bit more uniqueness and flavor than traditional mac and cheese dishes.
